Altura is a startup born in 2019 from the idea of Lorenzo and Eduardo, both lovers of mountains and gastronomy. Our goal is to make smoked trout, a forgotten gastronomic delicacy, known and available, and to reintroduce the market to Italy and, in particular, to the consumption of freshwater fish in the Alps.

Our passion was a good starting point, but at some point the need to answer a question arose in our minds." The world of fishing is vast and often confusing. Everyone knows fish are good for you, but are we sure this applies to all fish?" We want a more sustainable, high-quality future. Both of these are now obvious, and the current intensive fishing techniques no longer guarantee it. The long production chain has taken us too far away from our responsibility to the environment and we want to make more responsible choices. From this consideration comes the project to create a network that unites the most virtuous farmers in the Alps of Valle d'Aosta and Piedmont. Small, low-density farms that coexist with their surroundings, respecting the trout, giving them space and time to grow on a natural diet and without antibiotics.
